Sourced, crafted, toasted, and seasoned under the watchful eye of the Macallan Master Woodworker, the hand-picked casks are delivered according to the exacting specifications of the Macallan Whisky Mastery Team. For every expression of The Macallan, the quality of the whisky depends largely on the quality of the oak casks in which it is matured, as well as the quality of our 'new brand' spirit distilled from water, yeast, and barley. With up to 80% of the final character and flavour of Macallan's determined by the quality of the cask, the oak cask is the most important factor in ensuring and delivering the quality and style of our single malt.

All our whiskies derive 100% of their color from the wood in which they are aged. As wood is a natural product, each tree is different and in turn imparts different flavors and colors to the whisky during maturation. The skill of the whisky makers ensures that the color is as consistent as possible from bottling to bottling, through the management and selection of casks that provide the spectrum of natural colors essential to Macallan single malt.

Macallan works closely with fully integrated 'tree to finished tempered barrel' companies in Spain; to identify oak trees in the forests of northern Spain, they fell the trees, saw and dry the oak staves before sending them south for further air drying to reduce moisture even further. The distillery was expanded from two stills to four in 1899 and then to six in 1960.

At that time, Cardhu was seen as the Highland base of Johnnie Walker, but, in addition to supplying liquid for the world's best-selling blend, from 1981 it was also the first single malt brand venture in the modern era for the industry giant DCL, whose chairman from 1963-67 was John and Helen's great-grandson, Sir Ronald Cumming.

Having a brand that is both a key element of a blend and a single malt requires some complicated balancing acts. In 2002, this balancing act failed. Projected sales for the single malt in Spain and France were estimated to exceed the distillery's capacity – which also had to supply fillers for the growing Walker line.

The solution was to transform Cardhu, the single malt brand, into what was then known as vatted malt (a blend of single malts from different distilleries), while maintaining its overall character. Needless to say, this was considered somewhat confusing for the consumer and, after a brief and somewhat ridiculous period in which the distillery's name was changed back to Cardow, the policy was abandoned.

The consequences of the incident resulted in a complete overhaul of the Scotch whisky labeling regulations and the creation of a new term: 'blended malt'.

Today, Cardhu continues to act as 'home' for Johnnie Walker – with an impressive visitor center – and bottlings of the single malt are once again increasing.

In 2018, Diageo revealed plans to spend £150 million on modernizing tourist facilities across Scotland, including a new brand home for Johnnie Walker in Edinburgh and enhanced visitor centers in Cardhu, Clynelish, Caol Ila and Glenkinchie, representing some of the regional styles present in Walker.

The Cardhu update will highlight the distillery's history, including the influence of Helen and Elizabeth Cumming.
