The gin at 9 Moons comes from new French oak barrels. They were filled with high-proof Martin Miller Gin and aged for nine lunar cycles, or about nine months, in our barrel shop in Borgarnes, Iceland. Then, through a Solera Vat process of aging and blending two different batches, it promises excellent consistency while maintaining the complex and distinct flavor profile.

Description

Martin was an avid traveler and had been to Tuscany, where he loved the food, but not always the juniper. He also traveled to India and loved the food. Are you seeing a theme here? However, while he enjoyed himself in the spice markets, he was not always impressed by the juniper found there.

On the other hand, he occasionally remembered, a little sadly, a party in Macedonia, where they spent long nights at the casino,

“Good food,” he said, “but very bad odds.”

But he still refused to bet on the juniper he found there. Now that was a problem.

In his opinion, juniper was a difficult and treacherous crop, varying enormously in quality from year to year. Juniper grows slowly, and when the bushes reach a certain age, they stop producing usable fruit. Relying on a single source, for him, was a big mistake. Instead, he selected the harvest of the harvest, from any source, always choosing the fattest fruits, those rich in oils and aromatic beauty. Those and only those would go into your gin.
