Brut Majeur representa perfeitamente o estilo AYALA. A Chardonnay, casta emblemática, presente a 55% neste cuvée expressa toda a sua pureza e elegância.

A mesma pureza expressa-se através da baixa dosagem e da vinificação em cubas de inox, que asseguram o respeito pelos aromas primários. Um estágio prolongado de três anos nas caves confere o toque final a este cuvée, onde o equilíbrio e a precisão convivem com o requinte e a elegância.

Fruto de um blend sob medida, o Brut Majeur inclui mais de 70 crus de toda a região de Champagne. Esta fonte excepcional aproveita ao máximo a riqueza dos terroirs: Côte des Blancs, Montagne de Reims, Vallée de la Marne, Aube, Vitryat ou mesmo Sézannais.

No momento da vinificação, 120 cubas individuais de inox acolhem cada um um cru específico, casta e ano. Este tratamento cuidadoso da matéria-prima permite preservar a integridade e personalidade de cada cru, de forma a criar um blend de uma diversidade extraordinária.

The House has an incredible history, which is above all that of a visionary spirit, with a melodious name from afar. The name AYALA seems to have been tailor-made, by chance, for the village of Aÿ, where the House has been located since its creation. A curious and audacious personality, Edmond de AYALA always sought to go further. The AYALA House is vibrant with the spirit of excellence and adventure inspired by its founder.

A pioneer in introducing a drier style, he had the talent to launch "dry champagne" in 1865, with only 21 g/L. A bold statement in favor of purity, contrasting with the traditional French dosage of over 150 g/L at the time.

Since its creation, the young House has been a fundamental reference, having been one of the founding members of the Syndicat des Grandes Marques in 1882, now called the Union des Maisons de Champagne.

After France, the House continued its growth in England, thanks to Fernand, Edmond's younger brother, who established a lasting brand awareness, leading to a royal warrant in 1908, following the coronation of King Edward VII.

The House experienced a golden age in the 1920s with an annual production of one million bottles, placing it among the largest Houses of the time. During the post-war period, the House was led by the great names of Champagne, René Chayoux and Jean-Michel Ducellier, who promoted interprofessional organization, contributing to the development of the appellation.

To restore the dormant beauty of Aÿ to its former grandeur. The construction of a new winery in 2007 provided the House with modern winemaking tools, befitting the ambitious quality standards of AYALA Champagne wines. Redistribution on the international market was successfully achieved.

Hadrien Mouflard was appointed CEO in 2012, with the mission of accelerating AYALA's development in France and internationally. The wine style became firmly established in Chardonnay. The brand identity was completely rethought, with the design of new labels inspired by the Maison's historical codes. Numerous investments were successfully launched in the vineyard and cellars.

For the past 10 years, the House has been working with great precision to develop the uniqueness and quality of its cuvées and reinforce the pillars that form the AYALA style: pure expression of Chardonnay, unique diversity of crus, bespoke blends, reserve wines, and low dosage.
