Aged for 12 months in new barrels and then several years in older barrels. Therefore, much older than the minimum 4 years of age required by regulation, this VSOP is the most sought after.
Golden in color, not too light or too complex, a perfect balance, it has a structure that remains on the palate.
Lots of elegance, notes of vine flowers that evolve into dried flowers. You will feel some fruits (Pear, apricot),
VSOP is very round, smooth and thin on the palate.

Description

Chateau de Montifaud is definitely a family affair. For six generations, the Vallet family has produced some of the best brandies in France.
The vineyard, created in 1837 by Augustin, saw the succession pass from generation to generation: Pierre, Maurice Louis and Michel. Then, in October 2000, Laurent came to join his father and grandfather. According to family tradition, when a son joins his father to work together, a portion of the brandy distilled that year is preciously reserved and will only be sold by future generations. So it is that in the darkness of their «Paraíso» cellar there are bottles of cognac expertly crafted by Pierre and Maurice Vallet. These family cellars have also seen the aging of cognacs dating from 1920 to the present day. A portion of these vintages were sealed by the BNIC (« Bureau National Interprofessionnel du Cognac », the National Interprofessional Authority of Cognac).
Over generations, the vineyards have extended to more than 125 hectares in the two main growing regions of the Cognac area: in Grande and Petite Champagne, whose soil contains a very large amount of active limestone. This limestone content is a dominant factor in the quality of our “eaux-de-vie” (wine spirit).
Chateau de Montifaud applies traditional techniques passed down from father to son and, at the same time, combines today's new technologies. All of this makes it possible to accentuate the natural qualities of the “eaux-de-vie”: the floral touches, the delicacy and elegance on the nose, the roundness, the softness and the long finish.
