Description

“SHINOBU” means “tolerance” in Japanese, symbolizing the spirit of a samurai, how to make great spirits takes time, patience and persistence.

Shinobu Distillery is located in the beautiful Niigata Prefecture of Japan, a place that is praised locally for its “three white treasures”, namely SNOW, RICE AND LOOT.

In the distillery lives a passionate whiskey lover and an experienced brewer, Mr. Ken Usami, who also founded the craft brewery called Niigata Beer 20 years ago in the same city. As an innovator at heart, Mr. Usami was the first brewer to apply FERMENTATION AND SECONDARY BOTTLE AGING to Niigata beer.

Mr. Usami dreams of creating a local whiskey distillery that is able to showcase the quality of local pure water and serve the passionate community of spirit lovers. Finally, in 2017, Mr. Usami obtained the first whiskey license for Niigata (another FIRST!) and thus began his journey to becoming a distiller.

While the distillery is still under construction, Mr. Usami wants to experiment with blending WORLD WHISKEYS to create the unique flavors of Japan. Thus are born the first expressions of the Mizunara oak finish.
