Filipa Pato & William Wouters are a magical couple united by their passion for wine and gastronomy.
Our philosophy is simple: to create authentic wines that faithfully reflect their origin. Focusing solely on the traditional grape varieties of Bairrada, we work exclusively with Baga, Bical, Arinto, Cercial, and Maria Gomes. The vineyard is our priority, and from early on we abandoned the use of herbicides, in favor of soil health and biodiversity in the vineyard. Thanks to ongoing research into the surrounding plants, both in the forest and some cultivated in our backyard, we now use around 15 different plants in our Biodynamic blends. In the winery, intervention is minimal; the grapes are selected in the vineyard, we ferment with indigenous yeasts, and we use ancestral methods such as wooden lagares and amphorae. The wine's evolution is rigorously monitored so that each wine expresses the authenticity of our old vines. Ultimately, we create "Terroir" wines, uniting knowledge, art, and nature to produce "without makeup," each wine with its own character.
