Until around 1950, Quinta do Monte de S. Sebastião consisted only of several uncultivated plots of land. After that date, the owners at the time converted the land into vineyards with some terraces, planted an olive grove, almond orchard and other intercropped fruit trees, and began construction of the main house with wine presses, where the farm's wine was produced. Later, an annex was built for a still and also a small house that served as a residence for the farm's caretaker.
For its time, and due to its privileged location, abundant labor force, and available material resources, the Quinta do Monte de S. Sebastião could be considered a pioneering agricultural operation.
